Digging for Recipes

If I’m to do this Vegan thing, I guess I’ll need to cook, or, at least, assemble food into something akin to edible arrangements. And that means, of course, scouring the Internet for recipes. Since I have little time to cook, they’ll need to have as few ingredients, as possible.

And, it didn’t take long to stumble upon the awesome-looking eats at Forks Over Knives. As soon as I laid eyes on the site, a welcome feeling washed over me, but I could not say why. At any rate, I chose 3 to start, and they were all tasty.

Thankfully, in my fridge, there also lurk a few basics: Mediterranean hummus, peppers, leeks, romaine lettuce, guacamole, and tomatoes. It’s a start. In those ingredients, there are at least a few salads.

Time to eat some leftovers!
